🌱 Matcha Chia Pudding with Coconut & Berries

A refreshing, antioxidant-packed breakfast or snack that feels like dessert, but fuels like wellness.

 

Ingredients (Serves 2):

  • 1 ½ cups unsweetened coconut milk (or any plant-based milk)

  • 2 tbsp chia seeds

  • 1 tsp matcha green tea powder

  • 1–2 tsp maple syrup or honey (to taste)

  • ½ tsp vanilla extract

  • Pinch of sea salt

  • Fresh berries (strawberries, blueberries, raspberries)

  • Optional toppings: shredded coconut, granola, pumpkin seeds

 

Instructions:

  1. In a mixing bowl, whisk together matcha powder and a small splash of warm water until smooth (this helps prevent clumping).

  2. Add in the plant-based milk, vanilla, maple syrup, and sea salt, then stir well.

  3. Stir in the chia seeds and mix until evenly combined.

  4. Let sit for 10 minutes, then stir again (this prevents seeds from clumping together).

  5. Cover and refrigerate overnight or for at least 3–4 hours.

  6. Once thickened, give it a final stir and top with berries, coconut, and any of your favorite superfood toppings.
